Ingredients

  • 4 oz coconut water
  • 12 ounce pineapple juice
  • ½ lb strawberries washed and stemmed
  • 3 Tbs granulated sugar
  • 1 Tbs water
  • Blue Food coloring

Instructions

  1. Place strawberry, sugar, and water in a large bowl and use an immersion blender to blend into a smooth strawberry puree. If you don't have an immersion blender, you can use a regular blender as well. Pour the puree mixture evenly at the bottom of four 6 ounce glasses.
  2. Combine coconut water and pineapple juice and mix thoroughly. Add one drop of blue food coloring and stir until well combined.
  3. Split coconut + pineapple mixture evenly on top of the strawberry puree.
  4. Use a stirring stir or chopstick to swirl mixture into the strawberry puree to give that swirl lava look.
  5. Garnish with fresh strawberries, pineapple, and candy fish (optional).
