Description
Moist and Rich Brownie Cookies begin with melting semi-sweet chocolate, which is then cooled before mixing into a creamy blend of butter, granulated and brown sugar, eggs, and vanilla extract. Dry ingredients including flour, cocoa powder, baking powder, and salt are carefully folded in to maintain the tender structure. Semi-sweet chocolate chips are folded in last to distribute pockets of chocolate flavor. Baking at 350°F produces cookies with a soft interior and slightly crisp edges.
These cookies offer a dense, moist crumb similar to traditional brownies but in a cookie form. The melted chocolate and chocolate chips provide layers of chocolate flavor, while the combination of granulated and brown sugar balances sweetness with slight caramel notes. Their texture makes them suitable for packing as snacks or serving alongside milk or coffee.

Ingredients
- 3/4 cup all-purpose flour
- 1/2 cup cocoa powder unsweetened
- 8 oz semi-sweet chocolate coarsely chopped
- 1/2 cup butter softened at room temperature
- 2 egg large
- 1 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup chocolate chips semi-sweet
Instructions
- Preheat the oven to 350 degrees F.
- Melt the chocolate in the microwave. Heat in 20-30 second intervals, stirring after each interval until the chocolate is fully melted. Then set the chocolate aside to cool some so it doesn’t cook the eggs in the cookie batter.
- In a separate bowl, stir together the dry ingredients: flour, chocolate powder, baking powder and salt.
- Then in a large bowl, beat together the butter and both of the sugar together with a stand up mixer or a hand held mixer until creamy. Then add in the eggs and vanilla extract. Mix these ingredients together on high speed until the mixture is smooth and creamy. Scrape down the sides of the bowl. Then pour in the cooled melted chocolate and beat for 2-3 minutes until the chocolate is combined.
- Slowly add the dry ingredients into the butter mixture. Mix on a low speed slowly just until the ingredients are just combined. Be careful to not over mix the ingredients.
- Then fold in the chocolate chips.
- Place the cookie dough onto the baking sheet in 1-2 Tablespoonfuls of the cookie dough.
- Bake for 10-12 minutes until the edges of the cookies are set (be careful not to over bake). The cookies will be soft but will harden as they sit.
- Let the cookies sit on the baking sheets for 5 minutes and then transfer them to a wire rack to cool completely.
- Then they are ready to serve and enjoy!
