  • 4 banana medium, very ripe
  • 1 egg
  • 1/2-3/4 cup sugar (I added 3/4 cup and found it a little sweet, so feel free to go down to 1/2 cup)
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil
  • 1 1/2 cups all-purpose flour or 1/2 cup whole wheat flour and 1 cup regular flour
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • salt pinch
  • 1 cup dark chocolate chips or dark chocolate chunks

Instructions

  1. Preheat oven to 180 C. (350 F). Grease a 9x5 inch loaf pan, and line with parchment paper for easier removal.
  2. Mash bananas well, either by hand or by using the paddle attachment of a stand mixer. Add egg, sugar, vanilla, and oil and mix well until combined.
  3. Add the dry ingredients and mix until just combined and no flour streaks remain.
  4. Fold in the chocolate chips with a spatula, don't overmix. Pour batter into prepared pan and bake for 45 minutes or until toothpick inserted in center comes out clean. Cool slightly before slicing.
