Ingredients

Servings
  • 2 ½ cups oat flour
  • ½ cup coconut sugar or brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon cloves
  • ¼ teaspoon nutmeg
  • ½ cup raisins
  • ¼ cup unsweetened apple sauce or 1 apple diced
  • 1 tablespoon molasses
  • 1 teaspoon vanilla
  • 3 large eggs
  • cups milk

For the Topping:

  • 3 tablespoons oats
  • 1 tablespoon coconut oil or canola oil
  • 2 tablespoons coconut sugar or brown sugar

Instructions

  1. Preheat oven to 350 degrees F
  2. Combine the dry ingredients in a large bowl.
  3. In a food processor combine the raisins, molasses, vanilla and applesauce (or diced apple) and pulse a few times to blend
  4. In a smaller bowl combine the eggs and milk.
  5. Add the wet ingredients to the dry ingredients and mix gently.
  6. Stir in the molasses mixture.
  7. Grease the muffin tin with coconut oil
  8. For the Topping: In a small bowl mix together the above ingredients.
  9. Sprinkle topping mixture on each muffin.
  10. Bake 15 – 18 minutes or until a toothpick comes out clean.
