Mom's Chicken Drumsticks Recipe
Description
This recipe marinates chicken drumsticks in a blend of pureed onion, mayonnaise, salt, black pepper, and optionally a sweet and spicy sauce, allowing the flavors to penetrate the chicken thoroughly. The pureed onion adds moisture and a subtle savory acidity, while the mayonnaise contributes richness and helps the chicken brown during baking. The drumsticks are refrigerated for at least 6 hours or overnight to deepen the flavor. Baking at 400°F begins with skin-side-up to promote roasting and finishes skin-side-down to cook evenly. A final broil step crisps the skin for texture contrast without drying the meat. The result is tender, flavorful drumsticks with a well-balanced marinade and a crispy skin exterior.
Ingredients
- 4 1/2 to 5 lbs chicken drumsticks 1 large pack
- 1 yellow onion pureed, medium
- 2 Tbsp mayonnaise
- 1 tsp black pepper
- 1 Tbsp salt
- Jamaica me sweet hot and crazy sauce optional, 1 to 2 Tbsp, for a little spice
Instructions
- In a small bowl, stir together onion puree, 2 Tbsp mayo, 1 tsp black pepper, 1 Tbsp salt and hot sauce if using.
- Place chicken drumsticks into a large mixing bowl or soup pot then pour on the marinade and toss to coat the drumsticks. Cover with lid or plastic wrap and refrigerate at least 6 to 8 hours or (preferably) overnight.
- Line a rimmed baking sheet with parchment paper or foil and bake skin-side-up at 400˚F for 45 minutes in the oven then turn drumsticks over (skin-side-down) and bake another 15 minutes. For extra crispy skin, turn drumsticks again and broil 3 minutes or until skin is browned and crisp.
Notes
- Puree the onion using a box grater's coarse side or a food processor to achieve applesauce-like consistency for better marinade absorption.
- Marinate chicken for at least 6 hours, preferably overnight, for best flavor penetration.
- Broiling at the end crisps the skin; monitor closely to avoid burning.
