Mom's Easy Meatball Soup
Description
This meatball soup combines ground turkey meatballs seasoned simply with salt, pepper, and egg, hand-shaped and gently cooked in simmering broth. The broth itself is enriched with grated carrots and diced onions that are sautéed first to soften and deepen their flavor. Potatoes and rice add body and heartiness to the soup.
The cooking method ensures meatballs remain intact by adding them to boiling water and simmering gently. The simmering process also allows the flavors from herbs, vegetables, and meat to meld. Chopped green onions and fresh parsley added at the end lift the broth’s brightness and add fresh herbal notes.

Ingredients
- 1 lb ground turkey
- 1 1/2 tbsp salt divided
- 1 tsp black pepper ground
- 1 egg
- 2 tbsp olive oil
- 2 carrot grated, medium
- 1/2 onion finely diced, medium
- 3 potato cut into bite-size pieces, medium
- 1/2 cup rice
- 2 tbsp green onions chopped
- 2 tbsp parsley chopped, fresh
Instructions
Making Meatballs For the Soup
- Combine the ground meat, 1/2 tbsp salt, pepper, and an egg.
- Shape round balls out of the meat mixture. You can use an ice cream scoop to achieve more even results.
Mom's Meatball Soup
- Sauté grated carrots and diced onions in 2 tablespoons of oil. Sauté until the vegetables are soft (about 5 minutes) and set them aside.
- Place a cooking pot with 4 quarts of water on high heat. Add potatoes, rice, and sautéed ingredients to the pot. Bring it to a boil and let it cook for about 10 minutes.
- Once the broth is boiling, add meatballs in one by one. Make sure that the water is boiling at all times, otherwise the meatballs will fall apart. Season with remaining tablespoon of salt and pepper to taste. Turn heat to low and simmer for 15 minutes.
- Add chopped green onions and parsley to the meatball soup. Simmer for another 15 minutes. Serve and enjoy!
