Mom's Meatloaf

Mom's Meatloaf blends seasoned ground beef with breadcrumbs, eggs, and aromatics like garlic and onion, enhanced by Worcestershire sauce and herbs. The meat mixture is shaped into a loaf and baked with a brown sugar glaze that adds a slightly sweet and tangy finish. This hearty dish offers a comforting texture and layered flavor, suitable as a main course paired with typical sides.

Description

Mom's Meatloaf recipe features ground beef combined with grated onion and garlic, Italian-style breadcrumbs, eggs, Worcestershire sauce, ketchup, fresh parsley or chives, and a range of seasonings including Italian herbs, thyme, garlic and onion powder, and black pepper. Beef bouillon cubes provide additional depth. The mixture is gently formed into a loaf shape and placed in a lightly oiled loaf pan for even cooking.

The brown sugar glaze topping, made from ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, and powders, is prepared separately and spread on the meatloaf before baking. This glaze injects a balanced sweetness and tang that complements the savory meat. Baking at 350°F cooks the loaf thoroughly while maintaining moisture.

The recipe offers flexibility with onion varieties and breadcrumb types, and the glaze ingredients can be modified. The loaf pan size, around 9x5x2.5 inches, ensures proper shape and bake time. This meatloaf provides a solid, flavorful entrée with a classic home-cooked profile.

Proper mixing of ingredients and gentle forming help maintain the meatloaf's texture, and using fresh herbs like parsley enhances its freshness. The glaze may be applied during or near the end of cooking to avoid burning its sugars.

  • Italian breadcrumbs add more flavor but regular or panko breadcrumbs can be used instead.
  • Tomato ketchup adds moisture and flavor; barbecue sauce is a viable alternative.
  • Crumbled beef bouillon cubes or 2 teaspoons of beef bouillon powder can replace the bouillon cubes for seasoning.
  • Use any neutral cooking oil to grease the loaf pan lightly before baking.
  • A loaf pan of approximately 9x5x2.5 inches is ideal for shaping and baking the meatloaf evenly.
