Mom's Overnight French Toast Casserole

My Mom’s Overnight French toast casserole recipe features tart apples, brown sugar, and cinnamon under a layer of tender, fluffy French toast.

Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter melted
  • 3 tsp ground cinnamon divided
  • 3 apple or other tart apple, Granny Smith variety
  • 1/2 cup dried cranberries (See Note 1)
  • 6 egg large
  • 1 1/2 cups milk
  • 1 tbsp vanilla
  • 8 cups French bread cut into 1-inch cubes

Instructions

  1. In a large bowl mix together the brown sugar, melted butter and 1 teaspoon cinnamon.
  2. Core, peel and cut the apples into 1/4-inch slices. Toss in the brown sugar mixture along with the cranberries.
  3. Spread the apple mixture evenly on the bottom of a greased 9x13" baking dish. Cover the apples with the cut bread cubes.
  4. Whisk together the eggs, milk, vanilla and remaining 2 teaspoons cinnamon. Pour evenly over the bread and cover with foil. Refrigerate overnight (at least 8 hours) to soak.
  5. Remove from refrigerator at least 30 minutes before baking. Preheat oven to 375°F.
  6. Bake covered for 45 minutes, remove foil and bake another 5-8 minutes until top is golden brown. Let stand 5 minutes before serving.

Notes

  • Feel free to reconstitute the dried cranberries in just enough water to cover for 5 minutes to plump them up.
