Mom’s Shrimp Dip
Description
This recipe uses drained and rinsed canned shrimp which are chopped finely and combined with softened cream cheese and good-quality mayonnaise to form a smooth, creamy base without lumps. Green onions add a mild pungency and fresh flavor, balanced by garlic salt and black pepper seasoning.
The dip is assembled by blending cream cheese and mayonnaise until smooth, folding in the chopped shrimp and green onions, then garnishing with whole shrimp and additional green onions for presentation. The texture is creamy and dip-friendly, suitable for spreading on crackers or scooping with fresh vegetables.
This dip can be made hours or a day ahead and refrigerated in a covered container for flavors to meld. Leftovers should be kept up to three days chilled to maintain freshness and safety.
Ingredients
- 1 can Shrimp drained and rinsed, tiny, 4 ounces
- 8 ounces cream cheese softened, full-fat
- ½ cup mayonnaise Do not use Miracle Whip, good quality
- ⅓ cup green onion plus a bit more for sprinkling over the top, finely chopped
- ½ teaspoon garlic salt
- black pepper to taste, freshly ground
Instructions
- Set aside a few of the nicer looking whole shrimp (to use for garnish), then chop up the rest.
- In a medium bowl, combine cream cheese and mayonnaise until blended and smooth. An electric mixer works best, to get the mixture completely smooth and lump-free.
- Add chopped shrimp, green onion, and garlic salt to the cream cheese mixture and fold to evenly combine.
- Transfer dip to a small serving bowl and top with reserved whole shrimp and additional green onion. Sprinkle a bit of freshly ground black pepper over the top. Serve with crackers and fresh veggies for dipping. For crackers, Keebler Original Club Crackers are a favorite for our family.
Notes
- This dip is a family Christmas Eve tradition and originates from Mom's recipe box.
- Prepare the dip several hours or up to a day in advance and store covered in the refrigerator to blend flavors.
- Leftover dip should be refrigerated in an airtight container and consumed within 3 days to maintain freshness and safety.
