Monday Pie

Monday Pie is a savory casserole featuring cubes of cold roast beef mixed with mushrooms, onions, baked beans, and tomatoes, topped with parboiled potato slices and cheddar cheese. The combination blends meaty, tangy, and earthy elements into a hearty dish baked until the cheese browns and the potatoes soften. Its layered texture and balance of flavors make it suitable for a filling family meal with vegetables.

Description

Monday Pie assembles roast beef cubes with finely chopped onions and mushrooms, a tin of baked beans, and tomatoes seasoned with gravy powder, Worcestershire sauce, flour, salt, and pepper. These ingredients create a rich, saucy filling. Parboiling the thinly sliced potatoes before layering over the filling ensures the topping cooks through evenly. Baking at 190°C melts and browns the grated cheddar cheese added after initial baking, producing a golden crust that contrasts nicely with the tender potato base.

The dish melds hearty protein and vegetables, with the baked beans and tomato providing sweetness and moisture. The potatoes form a soft yet slightly firm topping, while the melted cheddar adds a creamy, sharp finish. It pairs well with additional vegetables to round out the meal.
