Monkey Bread Muffins Recipe

Monkey Bread Muffins combine tender biscuit pieces coated in cinnamon and brown sugar, baked into individual muffin-sized treats with a sticky, buttery glaze. The soft, gooey texture contrasts the light crunchy top, making them a comforting sweet snack or dessert. Drizzled with a simple vanilla icing, these muffins work well for breakfast or a fun, shareable treat during gatherings.

Description

Monkey Bread Muffins are a variation of the classic pull-apart monkey bread, made by coating biscuit dough pieces in a mixture of cinnamon and brown sugar, then baking them in muffin tins with a buttery, syrupy coating. The result is a soft, sticky, and sweet muffin that crisps slightly on the edges while staying tender inside.

The process involves dipping biscuit pieces in melted butter and corn syrup, then rolling them in the cinnamon sugar mixture before baking. After baking, a smooth icing made of powdered sugar, milk, melted butter, and vanilla is drizzled on top, adding a creamy sweetness that complements the caramelized sugar.

These muffins are ideal for sharing during breakfast, brunch, or as a dessert. Their portioned size makes them easy to serve and enjoy without utensils, familiar and nostalgic for many.

Ingredients

Servings

Monkey Bread

  • 3/4 cup brown sugar
  • 3 teaspoon cinnamon
  • 8 Biscuits
  • 5 tablespoon butter
  • 1 tablespoon corn syrup

Icing

  • 1 cup powdered sugar
  • 2 tablespoon milk
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F. Grease a muffin tin and set it aside.
  2. In a small bowl, mix together brown sugar and cinnamon. Set aside.
  3. In a separate bowl, melt butter, then stir in the corn syrup.
  4. Remove biscuits from packaging and cut each into 6 pieces. Drop the pieces into the butter mix then dip them in the cinnamon sugar, covering each completely.
  5. Place four pieces into each cup of a heavily greased muffin tin. Bake for 12 minutes, then turn off oven and let sit for another few minutes. This gives them a little crunch without overcooking them.
  6. Remove from the oven and let cool before trying to remove them from the muffin tray.
  7. Combine all icing ingredients and drizzle all over each muffin. Enjoy!
