Monster Cookie Energy Bites
Description
This recipe brings together natural peanut butter, honey, and vanilla extract as a smooth base, enriched with rolled oats, flaxseed meal, and unsweetened shredded coconut for fiber and body. The dry and wet ingredients mix easily into a pliable dough, which is formed into bite-sized balls. The inclusion of raisins, mini chocolate chips, and colorful chocolate candies lends varied textures and sweet contrasts to the wholesome nuts and grains.
The energy bites do not require baking and are simply chilled to set. Their firm texture makes them convenient for packing in lunchboxes or carrying on-the-go. These no-bake snacks balance natural sweetness and nutty flavors with chewy and crunchy elements from the variety of mix-ins.
Stored in the refrigerator, they keep fresh for up to a week, and freezing extends storage to two months. Variations include substituting maple or date syrup for honey to make them vegan, and swapping peanut butter for other natural nut butters to suit preferences. These bites serve as a small, energy-dense snack for active days or casual nibbling.
