  • 1/2 cup kosher salt coarse grind
  • 1/3 cup garlic chips See Note 1, dried
  • 1/3 cup onion powder
  • 3 tbsp paprika
  • 3 tbsp dill seeds or caraway seeds
  • 1 tbsp orange peel See Note 2, dried

Instructions

  1. In a bowl mix the kosher salt, coarse ground black pepper, dehydrated garlic, onion powder, paprika, dill seeds and orange peel. Store in a dry location in an airtight container.
  2. This recipe makes 2 1/2 cups (See Note 3). Store in a sealed jar.

Notes

  • Use a citrus zester to remove orange peel without pith; dry fresh zest on parchment before storing to prevent clumping.
  • Fresh garlic can be used immediately, but dried garlic chips or granulated garlic are suitable substitutes for storage.
  • The recipe yields 2 1/2 cups of seasoning, equivalent to about 40 tablespoons, enough for multiple uses in home cooking.
