Montreal Steak Seasoning Recipe

Montreal steak seasoning is a coarse blend of toasted peppercorns, coriander, mustard, and dill seeds mixed with garlic, onion, salt, and spices including paprika and red pepper flakes. This blend delivers a robust, slightly spicy crust for grilled or pan-seared steaks.

Description

The Montreal steak seasoning recipe features a mix of toasted whole spices—black peppercorns, coriander, mustard, and dill seeds—coarsely crushed and combined with dried garlic, onion, coarse salt, paprika, smoked paprika, and crushed red pepper flakes. This combination creates a textured, aromatic seasoning with savory and mildly spicy notes to enhance the natural flavor of beef.

Toasting the whole spices before crushing releases their essential oils for a fresher, more intense flavor, while the coarse grind adds a satisfying crunch and visual appeal when applied as a rub.

This seasoning is ideal for rubbing onto steaks before grilling or pan-searing, bringing a balanced combination of heat, earthiness, and savory depth that complements the meat without overpowering it.

Ingredients

Servings
  • 2 tablespoons black peppercorns whole
  • 1 tablespoon coriander seeds
  • 2 teaspoons dill seeds
  • 2 teaspoons mustard seeds
  • 2 tablespoons garlic dried, minced
  • 2 tablespoons onion dried minced
  • 2 tablespoons coarse kosher salt or Maldon salt flakes
  • 1 tablespoon paprika
  • 2 teaspoons red pepper flakes or less depending on heat preference, crushed
  • 1/2 teaspoon smoked paprika

Instructions

  1. Heat a heavy skillet over medium heat. Add the peppercorns, mustard seeds, coriander seeds, and dill seeds and toast until very fragrant and the mustard seeds begin to pop. Be careful not to scorch or spices will become bitter. Remove from heat and let cool completely. Transfer the cooled spices to a ziplock bag and use a rolling pin or bottom of the skillet to coarsely crush the spices. Add the remaining ingredients and coarsely crush again. Transfer the blend to a jar with a lid and store in a cool, dark place. For best flavor use within a month. Makes about 1/4 cup.
