Morning Glory Muffins

Morning Glory Muffins combine whole wheat and all-purpose flours with shredded apple and carrot, coconut, pecans, and raisins for a textured, slightly sweet breakfast treat. The use of applesauce and brown sugar adds moisture and gentle sweetness, while cinnamon and nutmeg provide warm spice notes. These muffins bake into a tender crumb with a nutty and fruity character, making them suitable for morning meals or snacks.

Description

Morning Glory Muffins bring together a blend of whole wheat and all-purpose flour enriched with shredded apples and carrots, which offer moisture and subtle sweetness. Coconut and pecans add texture and richness, and the brown sugar sweetens the batter alongside warm spices like cinnamon and nutmeg. The combination of vegetable oil, applesauce, and eggs helps create a tender, moist crumb. Baking at 375 degrees Fahrenheit yields muffins with a nicely risen top and soft interior. These muffins work well as a wholesome breakfast option or a portable snack during the day.
