Moroccan Ras el Hanout Recipe

Moroccan Ras el Hanout is a complex spice blend combining cardamom, allspice, cinnamon, dried chile, black peppercorns, coriander seeds, ginger, turmeric, and aromatic herbs like mint, lavender, and rosebuds. Ground together into a fine powder, it imparts fragrant warmth and floral notes to dishes.

Description

This Moroccan Ras el Hanout recipe assembles a mixture of whole and ground spices common in North African cooking. The blend includes cardamom pods, allspice berries, cinnamon sticks, dried red chiles, black peppercorns, coriander seeds, ground ginger, turmeric, dried mint leaves, mace, cloves, anise seeds, nigella seeds, dried lavender, and dried rosebuds. When ground together finely, the combination provides a spicy, warm, and aromatic signature flavor.

The method involves using a spice grinder or electric coffee grinder to pulverize all ingredients into a powder. This fresh grinding preserves the bright, complex flavors before storing the blend in an airtight container. The spice mix typically lasts up to six months when stored well.

Ras el Hanout is used to season tagines, stews, and rice dishes. Its layered flavor profile brings warmth, sweet spice, floral hints, and mild heat to Moroccan and other North African cuisines. Its fragrant nature enhances meat, poultry, vegetable, and legume dishes.

This batch produces about one-third cup of the spice blend, making it convenient for use in various recipes that call for authentic Ras el Hanout seasoning.
