Moroccan Tomato Salad
Description
This salad combines large finely chopped tomatoes, peeled and chopped English cucumber, red bell pepper seeded and chopped, and large finely chopped yellow onion. The vegetables are mixed with olive oil, lemon juice, and a blend of chopped parsley and chives. Salt and freshly ground pepper season the salad to taste.

Ingredients
- 1 yellow onion large, finely chopped
- 6 tomato seeded and finely chopped, large
- 1 English cucumber peeled and finely chopped
- 1 red bell pepper seeded and finely chopped
- 3 tablespoons olive oil
- 3 tablespoons parsley chopped
- 3 tablespoons chives chopped
- 1 tablespoon lemon juice
- salt kosher salt, to taste
- black pepper kosher salt, to taste
Instructions
- In a bowl combine all the ingredients together and keep in the fridge until ready to serve .
- Serve cold.
Notes
- Prepare up to 4 hours ahead; the salad becomes juicier as it sits.
- Do not prepare the salad the day before to avoid excess watery texture.
