  • 1 red bell pepper seeded and finely chopped
  • 3 tablespoons olive oil
  • 3 tablespoons parsley chopped
  • 3 tablespoons chives chopped
  • 1 tablespoon lemon juice
  • salt kosher salt, to taste
  • black pepper kosher salt, to taste

Instructions

  1. In a bowl combine all the ingredients together and keep in the fridge until ready to serve .
  2. Serve cold.

Notes

  • Prepare up to 4 hours ahead; the salad becomes juicier as it sits.
  • Do not prepare the salad the day before to avoid excess watery texture.
