Mozzarella Stuffed Meatloaf

Mozzarella Stuffed Meatloaf is a baked loaf of seasoned ground beef filled with fresh mozzarella slices, then topped with a tangy and slightly sweet glaze made from ketchup, brown sugar, Worcestershire sauce, red wine vinegar, garlic, and spices. The filling creates a juicy, cheesy center, while the glaze adds caramelized flavor to the crust.

Description

This Mozzarella Stuffed Meatloaf recipe mixes ground beef with herbs like basil, oregano, and parsley, along with seasonings, bread crumbs, milk, and Worcestershire sauce to form a moist meat mixture. Half of the mixture is shaped into a loaf base, topped with slices of fresh mozzarella cheese spaced slightly from the edges, then covered with the remaining meat mixture and sealed around the edges. This layering results in a meatloaf with a melted mozzarella core.

The glaze combines ketchup, brown sugar, Worcestershire sauce, red wine vinegar, garlic, salt, and cayenne pepper. Half is poured over the meatloaf before baking, and after 45 minutes, the remaining glaze is added for the final bake at an increased temperature to create a caramelized, flavorful crust with a balance of sweet, tangy, and mild heat notes.

Baking in a glass baking pan allows even cooking and easy cleanup. The cheese stuffing keeps the interior moist and adds a creamy texture contrasting the seasoned meat. This meatloaf is suited as a hearty dinner centerpiece and pairs well with vegetables or mashed potatoes.

Ingredients

Servings

Meatloaf

  • 1 1/2 pounds ground beef lean
  • 1 cup bread crumbs plain
  • 1 teaspoon basil dried
  • 1 teaspoon oregano dried
  • 1 teaspoon parsley dried
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup milk
  • 2 tablespoons Worcestershire sauce
  • 8 ounces mozzarella cheese sliced, fresh

Glaze

  • 1 cup ketchup
  • 1/4 cup brown sugar tightly packed
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic crushed
  • 1/8 teaspoon salt
  • 1 pinch cayenne pepper

Instructions

  1. Preheat oven to 350 degrees. Lightly grease a glass baking pan (9x13) with nonstick cooking spray.
  2. In a large mixing bowl combine ground beef, bread crumbs, basil, oregano, parsley, salt, pepper, milk, and worcestershire sauce. Knead until combined.
  3. Divide meat in half. Shape one half of the meat into the bottom half of the loaf and place in prepared pan. Place mozzarella slices down the center, leaving 1/2 inch around the ends and sides. Shape remaining half of meat as the top half of the loaf, sealing the edges. This is a free-form loaf so it doesn't need to be perfect.
  4. In a small mixing bowl whisk together ketchup, brown sugar, worcestershire sauce, red wine vinegar, garlic, salt, and cayenne pepper. Pour half of this mixture over the meatloaf, reserving the remaining half for later.
  5. Bake in the preheated oven for 45 minutes.
  6. After 45 minutes, remove from oven and pour the remaining sauce over the loaf. Increase temperature to 400 degrees and bake for an additional 15 minutes.
  7. Let rest 5 to 10 minutes before serving.
