Muesli Recipe: How to Make Homemade Breakfast Cereal
Description
This muesli recipe starts by coating rolled oats and nuts with maple syrup, then toasting them in the oven until golden and fragrant. The toasting step produces a crunchy texture and rich flavor that distinguishes it from raw muesli blends. Dried fruit is cut into bite-sized pieces and stirred into the cooled oat mixture for bursts of sweetness and chewiness.
Served with cold or warm milk or nondairy milk substitutes, this cereal offers a balanced combination of hearty grains, crunchy nuts, and sweet fruit. The recipe adapts well to variations with different nuts, seeds, or grains and can be adjusted to personal taste preferences.
Portion-wise, the recipe yields about eight ⅓-cup servings, but it can be doubled or tripled for larger batches. Note that gluten-free oats are necessary for gluten-free diets, and alternate rolled grains may be substituted to change texture and flavor. Sweeteners other than maple syrup like honey or agave are acceptable. The variation in timing and procedure when adding syrup before or after toasting affects the final taste.
Ingredients
- 2 cups rolled oats (See recipe notes)
- ¼ cup nuts or seeds
- 2 tablespoons maple syrup (See recipe notes)
- ¼ cup dried fruit
- milk or non-dairy milk substitute, for serving
Instructions
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper, aluminum foil, or a silicon baking sheet. Spread the oats and nuts over the baking sheet, and drizzle the syrup over the oats. Note: If using aluminum foil, spray or brush the foil with oil to prevent sticking.
- Toast the oats in the oven for about 10 minutes, until the oats are golden. Note: Some nuts will burn faster than others. Start checking on the oats and nuts at 8 minutes, and take the tray out of oven early if the nuts are getting dark.
- Take the tray out of the oven, and allow the mixture to cool.
- Cut any large pieces of dried fruit into small, bite-sized pieces. Stir the fruit into the oat mixture.
- Serve cereal immediately with either cold or hot milk, or store in an air-tight container or bag. Use within 1-2 weeks, or freeze for up to 2 months.
Notes
- This recipe makes approximately eight ⅓ cup servings, suitable for 4-6 generous portions and can be easily doubled or tripled.
- Use certified gluten-free oats if needed, and consider that substitutions of grains may affect gluten content.
- You can substitute maple syrup with agave syrup, honey, or sugar based on preference.
- Adding syrup before toasting yields a different flavor compared to adding syrup after toasting.
- Customize the muesli with different nuts, seeds, dried fruits, or rolled grains to suit your taste.
