Muffin Mix Pancakes

Muffin Mix Pancakes transform a pre-packaged muffin mix into pancake batter by combining it with milk. The resulting batter cooks into 3 to 4-inch pancakes with set edges and a soft interior. Butter for cooking adds flavor and prevents sticking. The pancakes are simple to prepare and serve well with traditional maple syrup for breakfast or brunch.

Description

This recipe uses a single package of muffin mix combined with milk to create a pourable pancake batter. Stirring the dry mix with milk until well combined forms a batter that cooks evenly on a preheated pan greased with butter. Cooking over medium heat allows the pancakes to develop slightly set edges before flipping to finish cooking the other side. Bubbles forming in the batter signal when to flip.

The pancakes yield a tender texture similar to muffins but with the thinness and softness expected from pancakes. They are quick to make and versatile depending on the flavor of muffin mix used, ranging from fruit to spice varieties.

Serve the pancakes hot with maple syrup or your favorite pancake toppings. This method offers an easy shortcut to pancake batter without measuring multiple ingredients.

Ingredients

Servings
  • 1 (7 ounce) muffin mix your choice of flavors, package
  • ½ cup milk

Instructions

  1. Place dry muffin mix in a small mixing bowl. Add milk; stir with a fork until well combined.
  2. Pre-heat pan over medium heat. Add a small amount of butter and spread to coat bottom of pan.
  3. Once heated, spoon batter into pan to form 3 to 4-inch diameter circles. Cook until edges appear set ; flip with a spatula and continue cooking 1-2 minute until cooked through. {Usually when cooking pancakes, bubbles rising up through the batter are a sign it's time to flip them.)
  4. Repeat with any remaining batter.
  5. Serve with maple syrup, if desired.
