Mugicha is a traditional Japanese roasted barley tea made by roasting pearl barley until golden brown, then simmering it in water to extract a nutty, caffeine-free infusion. The result is a refreshing tea served hot or chilled, with a toasted aroma and smooth flavor.

Description

The process begins by washing pearl barley and drying it thoroughly before roasting in a pan over low to medium heat until the barley grains are browned evenly. This roasting develops the characteristic toasty, slightly nutty flavor. Once cooled, the roasted barley is stored for brewing.

To prepare the tea, roasted barley is simmered in boiling water for 10 to 15 minutes, then strained to remove the grains. The brewed tea can be enjoyed hot immediately or chilled in the refrigerator for a cold, refreshing drink. The tea is naturally caffeine-free and has a gentle, toasted flavor profile suited to various drinking occasions.

Brewing Barley Tea

  • 4 cups water
  • 4 tbsp barley roasted

Instructions

Roasting Barley

  1. Wash the pearl barley to remove any dirt and debris.
  2. Drain the washing water and spread the barley grain on a mesh tray to sun dry the grain. *2
  3. Roast the sun dried barley in a frying pan over low to medium heat until the grain browned. *3
  4. Allow to cool completely then store in an airtight container.

Brewing Roasted Barley Tea

  1. Bring 4 cups of water to boil in a kettle or pot over high heat.
  2. Add 4 tbsp of roasted barley to the boiling water and simmer for 10-15 minutes over low heat.
  3. Turn the heat off and serve through a strainer to serve hot. *4
  4. Once it's cooled down, you can chill the brewed barley tea in a pitcher in the refrigerator to serve cold.

Notes

  • Sun dry the washed barley on a mesh tray in a sunny spot until fully dried before roasting.
