Description
The Mulled Apple Cider starts by combining sliced apples with brown sugar and warming spices including cinnamon sticks or ground cinnamon, pumpkin spice, allspice, ginger, and cloves. The mixture is brought to a boil, then simmered gently for three hours to allow the flavors to meld deeply.
After simmering, it rests uncovered for an hour to cool, then is carefully strained through a fine strainer and cheesecloth to remove solids and achieve a smooth liquid. This multi-step straining process yields a clear and refined cider.
The cider’s flavor complexity depends on the apple varieties used; sweeter apples like Gala or Fuji offer a mellow profile, while tart apples like Pink Lady add acidity. This infusion and careful cooking avoid bitterness, ensuring a balanced spiced apple drink to serve warm during fall or winter months.
For best flavor, mix apple types for complexity and avoid over-boiling to prevent bitterness. The apple pulp can be mashed to extract as much juice as possible during straining for richer taste. The finished cider can be stored in sealed bottles or jars for convenience.
Ingredients
- 10 apple cored and sliced
- 10 cups of water
- 2 to 4 tablespoons brown sugar depending on sweetness preference
- 3 cinnamon stick or ground cinnamon
- 2 teaspoons pumpkin spice
- ½ tablespoon ground allspice
- 3 pieces ginger smashed or powder
- 1 tablespoon clove whole or ground
Instructions
- In a large pot with a lid over medium high heat, place the apple slices. Add the sugar and spices. Mix well and cover with the lid.
- Bring to a boil, uncover and cook for 30 minutes. Then, reduce heat to a low simmer, cover, and cook for 3 hours.
- Once the 3 hours have passed, remove from the heat and let it sit for one hour uncovered.
- Once cooled, grab a large bowl and strain through a fine strainer and in a separate bowl, set aside the apple fiber. Pour the liquid back into the pot and strain it one more time. Run the cider through a cheesecloth until smooth liquid consistency is achieved. (This step takes time in order to achieve a smooth cider)
- Pour the cider in a bottle with a cap or large mason jars with lids to store.

- Choose apple varieties according to desired sweetness or acidity: Gala, Fuji, or Red Delicious for sweeter cider; Pink Lady or McIntosh for tart acidity.
- Mixing sweet, tart, and aromatic apples produces a more complex and balanced homemade cider flavor.
- Maintain a low and slow simmer to avoid bitterness that over-boiling can cause.
- During straining, mash the apple pulp to extract maximum juice and enhance flavor.
