Mushroom and Asparagus Frittata with Goat Cheese
Description
The Mushroom and Asparagus Frittata with Goat Cheese uses eggs whisked with water and kosher salt to create a fluffy base. Brown mushrooms are sautéed until soft, then asparagus is added for a brief cook to retain some snap. The egg mixture is poured over the vegetables, sprinkled with chopped green onion and tangy goat cheese, and gently cooked until edges begin to set. The frittata finishes under the broiler, puffing slightly and achieving light browning.
The goat cheese softens to creamy pockets amidst mushrooms and asparagus while the tender egg provides a mild backdrop. The vegetables add earthiness and fresh brightness. Served warm or room temperature, this dish can stand alone or be paired with a side salad or fresh fruit for a light meal serving one or two.
The recipe suggests using water and cooking spray to limit fat but butter or milk alternatives are possible. The simplicity and size make it suited for a quick meal. Adjust mushroom and asparagus quantities for desired vegetable ratio.
Ingredients
- 2 egg
- 1 teaspoon water , (or milk)
- pinch kosher salt
- 1 tablespoon butter , (or Cooking spray)
- 3 brown mushrooms , sliced
- 5 asparagus trimmed and cut into ½-inch pieces, spears
- 1 tablespoon green onion chopped
- 2 tablespoons goat cheese
Instructions
- Preheat the oven or toaster oven to broil.
- Spray a 7- to 8-inch non-stick fry pan with cooking spray and warm on medium heat. Add the sliced mushrooms and cook for 2-3 minutes, turning once or twice. Add the asparagus and cook for 1-2 minutes more.
- Whisk the eggs in a bowl with 1 teaspoon water and a pinch of kosher salt until light and frothy, then pour into the mushroom and asparagus mixture. Sprinkle with the green onion and the goat cheese.
- Cook the eggs undisturbed until the edges begin to pull away from the edge of the pan and begin to set. Gently lift the edges of the egg and tilt the pan so the uncooked egg runs under the cooked part and cook for another minute or so.
- Transfer the fry pan to the oven and broil for 2-3 minutes or until the eggs have puffed and have cooked through.
- Remove from the oven and sprinkle with more goat cheese if desired. Cut into wedges and serve warm or at room temperature.
Notes
- This single-serving frittata can stretch to feed two alongside a side salad or fresh fruit.
- Substituting water and cooking spray helps reduce fat content without compromising texture.
- Feel free to use a little butter instead of spray for richer flavor.
