Mushroom Brie Puff Pastry Appetizers
Description
This appetizer begins by sautéing minced shallot and garlic with sliced cremini mushrooms in olive oil and butter until softened. Fresh thyme and dry white wine are added and cooked down to intensify the mushroom flavor and remove excess moisture. Puff pastry is cut into squares and pressed into mini muffin tins, then lined with bite-sized slices of Brie cheese.
The mushroom mixture is spooned over the Brie, and the corners of each pastry square are folded up and twisted to seal in the filling. The pastries are brushed with melted butter, baked until the pastry is golden brown and flaky, and served warm. The mushrooms offer an earthy richness balanced by the creamy Brie and light, crispy puff pastry shell.
The appetizers can be assembled in advance and refrigerated or frozen unbaked. Baking from frozen requires a slightly longer cook time, monitoring carefully to prevent burning. These make elegant finger foods suitable for parties or casual entertaining.
Ingredients
- 1 box puff pastry thawed, frozen
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 shallot minced
- 1 garlic minced, clove
- 2 cups cremini mushrooms sliced
- 1 tablespoon thyme fresh leaves
- ¼ teaspoon salt
- ¼ black pepper
- ¼ cup white wine dry
- 12 oz Brie cheese sliced into bite-sized pieces
- 1 tablespoon butter melted
Instructions
- Preheat oven to 400°
- Lightly spray a 24 piece, or 2 12 cup mini muffin tin, or use non-stick pans
- In a large skillet, heat olive oil and butter over medium heat
- Add shallot, garlic, and mushrooms and cook until softened
- Add wine, salt, pepper, and thyme. Cook until the wine is completely reduced
- Remove from heat
- Cut pastry into 24 squares (a pizza wheel works great for this)
- Press a square of pastry dough into each hole of the muffin tin.
- Press a slice of brie into the bottom of each square of dough
- Divide the mushroom mixture evenly with a spoon, filling each muffin hole
- Lightly brush each puff with melted butter
- Fold the corners of each pastry square up, pinch together and twist to envelop all of the filling
- Bake 20 minutes or until pastry is golden
- Transfer to a platter and serve warm.
Notes
- Assemble the appetizers ahead of time and refrigerate covered, ready to bake when needed.
- You can freeze the assembled, unbaked puffs; bake from frozen at 400°F for 25-30 minutes, watching to avoid burning.
