Mushroom Chicken Bites
Description
Sautéed boneless skinless chicken thigh pieces are seasoned with Italian seasoning, salt, pepper, and red pepper flakes, imparting a mild herb and subtle heat. The chicken is cooked in olive oil until browned and fully cooked before being removed from the pan. Cremini mushrooms are then cooked in butter in the same skillet with onion and garlic powders, allowing them to brown and develop deeper flavor.
After the mushrooms have cooked, the chicken returns to the skillet with the remaining butter and fresh minced garlic. Stirring for a short time allows the garlic to soften without burning and melds the flavors together. Once cooked, the bite-sized pieces of chicken and mushrooms boast a savory, herb-inflected profile with buttery richness and a hint of spice, enhanced by fresh parsley garnish.
This dish is served warm and works well alongside simple sides like steamed vegetables or a salad. It can also be refrigerated for a few days or frozen for longer storage, making it a convenient meal option. The chicken remains tender while mushrooms contribute an earthy component.
Ingredients
- 2 tablespoons olive oil
- 1 pound chicken thighs boneless and skinless, cut in 1-inch pieces
- 1 teaspoon Italian seasoning
- ¼ teaspoon salt or to taste
- ¼ teaspoon black pepper or to taste
- ¼ teaspoon red pepper flakes
- 4 tablespoons butter unsalted, divided
- 8 ounces cremini mushrooms sliced
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 cloves garlic minced
- 2 tablespoons parsley chopped, fresh
Instructions
- Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken thigh pieces and season with the Italian seasoning, salt, pepper and red pepper flakes. Stir and cook for about 5 to 6 minutes until the chicken browns and is cooked through. Transfer the chicken to a plate and set aside.
- Cook the mushrooms: Add 2 tablespoons of the butter to the same skillet and melt. Add the sliced mushrooms then season with onion and garlic powder. Stir and cook for about 4 minutes or until the mushrooms start to brown.
- Finish the dish: Add the chicken back to the skillet along with any juices released in the plate. Add remaining 2 tablespoons of butter and minced garlic. Stir everything together and cook for 1 to 2 more minutes. Taste for salt and pepper and adjust as necessary. Remove from heat and garnish with parsley. Serve warm.
Notes
- For time-saving, substitute with a rotisserie chicken and add mushrooms cooked as directed.
- Clean mushrooms by brushing or wiping them to avoid excess moisture; if washed with water, dry thoroughly.
- Store leftovers in an airtight container in the refrigerator for 3 to 4 days; reheat in microwave or stovetop.
- Freeze cooled cooked chicken and mushrooms in a sealed container for up to 4 months; thaw fully before reheating.
