Mushroom Chicken Salad
Description
The Mushroom Chicken Salad combines diced cooked chicken breast with marinated mushrooms, pickles, peas, and sautéed onion and carrot. The vegetables are softened in a hot skillet before cooling, which brings out their sweetness while maintaining some texture. Mixing in mayonnaise last helps preserve the fresh ingredients and keeps the salad creamy but not heavy. The salt and black pepper help season and balance the flavors.
The salad offers a variety of textures from the tender chicken and creamy dressing to the slight crunch of pickles and the softness of sautéed vegetables. It’s suitable served chilled and can accompany sandwiches or be eaten on its own.
Ingredients
- 2 cups mushroom marinated
- 2 chicken breast cooked
- 1 onion cut into half rings, large
- 2 cups pickles
- 2 cups peas canned
- 2 carrot cleaned & grated, medium
- 1/4 cup mayonnaise dressing
- 1 tbsp neutral cooking oil generic cooking oil
- 1 tsp salt adjust to taste
- 1/2 tsp black pepper adjust to taste
Instructions
- If you're not using precooked chicken breasts, quickly sear them for 4-5 minutes per side until golden brown. Dice the chicken breasts into small cubes.
- Rinse and drain the peas and mushrooms under cold water.
- Dice the pickles into small cubes.
- Sauté the sliced carrots and onion on a very hot skillet until softened. Allow the veggies to completely cool. Mix all the chopped ingredients in a large bowl.
- Stir in mayonnaise right before serving and season to taste with salt and pepper. Enjoy!
