Mushroom Garlic Chicken

For the Chicken

• 4 chicken thigh I prefer thighs for this recipe, but breasts will be tasty too!, or thin chicken breasts
• 2 tbsps olive oil
• 1 1/2 tsp salt
• 1 tsp black pepper

For the Stew

• 4 tbsps butter unsalted
• 8 oz mushroom I like to use button mushrooms and slice them on my own but you can buy mushrooms too!, sliced
• 1 medium white onion sliced thin
• 2 tbsps garlic minced
• 2 cups chicken broth
• 3 tbsps flour
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp garlic powder
• thyme bunch
