Description

Mushroom Pork Chops feature pork steak seasoned and coated with a mixture of panko and seasoned bread crumbs, parsley, and garlic powder. After dipping in beaten egg, the chops are pan-fried briefly to brown both sides, creating a crisp, seasoned crust. The browned chops are then placed in a baking dish, topped with sliced mushrooms and canned cream of mushroom soup, and covered with foil for baking in a moderate oven.

This slow baking process allows the pork to become fork-tender, absorbing flavors from the mushroom topping and soup, which forms a rich, creamy sauce. The dish is finished with fresh parsley garnish and pairs well served over mashed potatoes, allowing the sauce to be soaked up.

Selecting pork cuts with more marbling, such as blade chops or pork steaks, enhances flavor and texture as leaner chops do not work as well. Longer baking times may be needed if pork is not yet tender. Homemade mushroom soup or cream sauce can be substituted for canned soup for a fresher sauce.

  • 2 pounds pork steak
  • salt to taste
  • black pepper to taste
  • cup panko bread crumbs
  • cup seasoned bread crumbs
  • 2 tablespoons parsley divided, chopped, fresh
  • 1 teaspoon garlic powder
  • 2 egg beaten
  • 1 tablespoon olive oil or as needed
  • 8 ounces mushrooms white or cremini, sliced ½-inch thick
  • 21 ounces condensed cream of mushroom soup 2 x 10.5 ounce cans

Instructions

  1. Preheat oven to 350°F.
  2. Check pork chops for bits of bone or debris. Season with salt & pepper.
  3. Combine panko bread crumbs, seasoned bread crumbs, 1 1/2 teaspoon of parsley and garlic powder.
  4. Dip pork chops in beaten eggs and then in bread crumb mixture.
  5. Heat 1 tablespoon olive oil in a large skillet and add pork chops. Brown on both sides, about 3 minutes per side. Repeat with remaining pork chops adding more oil if needed.
  6. Place pork chops in a large baking dish. Top with sliced mushrooms and mushroom soup. Cover with foil.
  7. Bake 1 1/2 to 2 hours, pull back the corner and check one of the pork chops. It should be fork tender. If not, bake 20-30 minutes more.
  8. Garnish with parsley and serve over mashed potatoes.

Notes

  • Use pork cuts with some marbling like blade, shoulder, or sirloin chops for best results.
  • Lean pork chops are not ideal; choose fattier cuts to maintain moisture and flavor.
  • Homemade mushroom soup or creamy mushroom sauce can replace canned soup for a fresher taste.
  • If pork is tough after baking, cover and continue baking for an additional 20-30 minutes before checking again.
