Mushroom Pork Roulade
Description
The Mushroom Pork Roulade features boneless pork butterflied and pounded thin, then layered with a sautéed blend of diced mushrooms and onions. A seasoning mixture of salt, black pepper, and Italian seasoning is applied both inside and outside the roll. After rolling tightly and securing with toothpicks or butcher's string, the roulade is seared on high heat to develop a browned crust, then baked at 380°F for about 30 minutes until cooked through. This method delivers a balance of textures: a firm yet tender pork exterior surrounding a soft, aromatic mushroom and onion filling infused with herb seasonings.
The dish can be sliced into rounds to reveal the spiral of mushroom and pork, making it suitable for a dinner centerpiece. The savory flavor combination comes from the mushroom sauté and Italian herb seasoning, while the pork provides a substantial base.
Ingredients
- 2 tbsp olive oil
- 1 lb mushrooms diced
- 1 onion diced, medium
- 3 lbs boneless pork
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tsp Italian seasoning
Instructions
- In a small bowl, combine the salt, black pepper, and Italian seasoning. Set the rub aside. Clean and dice the mushrooms and onion.
- Preheat a skillet with olive oil. Add in the diced mushrooms and sauté them until golden brown. Next, add in the onion and sauté it until softened.
- Butterfly the pork into a wide, thin piece. Using a meat tenderizer, pound it out until it's even in thickness. Season with 1/3 of the spice rub.
- Spread the sautéed mushroom and onion mixture over the pounded pork. Roll it up nice and tight and seal the roulade with a toothpick or butcher string soaked in water. Season with the remaining spice rub.
- Preheat a skillet over very high heat. Brown each side of the roll and season the outside with the seasoning rub.
- Bake the roulade for about 30 minutes at 380°F (you may need to adjust the cook time depending on how thick the pork is). Enjoy!
