Description
Mushroom Rice begins with sautéing sliced mushrooms in butter until browned and tender. Long grain rice is added to the skillet along with condensed French onion soup and beef consommé, creating a rich cooking liquid. Additional butter slices are scattered over the top before covering and baking at 425°F for 30 minutes, and then uncovered for another 30 minutes to allow the rice to cook fully and develop a slight crust.
The rice texture is fluffy and moist, infused with savory mushroom and beef flavors. The mixture of mushroom umami and condensed soups elevates what might otherwise be a simple rice side to a dish with concentrated taste and a silky mouthfeel.

Ingredients
- 1/2 cup butter divided use
- 12 ounces mushroom sliced
- 1 cup long grain rice uncooked
- 10 ounce can French Onion Soup condensed
- 10 ounce can beef consomme condensed
- 2 tablespoons parsley chopped
Instructions
- Preheat the oven to 425 degrees F.
- Heat 2 tablespoons of the butter in a large nonstick ovenproof skillet over medium heat.
- Add the mushrooms to the pan and cook for 5-6 minutes or until tender and browned.
- Add the rice, French onion soup and beef consomme to the pan.
- Cut the remaining butter into slices and add it to the pan.
- Cover the pan and bake for 30 minutes. Uncover the pan and bake for an additional 30 minutes.
- Fluff the rice with a fork and stir in the parsley, then serve.
Notes
- If you lack a nonstick ovenproof skillet, use a square baking dish coated with cooking spray and covered with foil for baking.
