Mushroom Rice Pilaf
Description
Mushroom Rice Pilaf starts by cooking Banza rice in a mixture of vegetable broth, water, and fresh sage, allowing the rice to absorb herbaceous flavors. Meanwhile, diced white onions, mushrooms, and spinach are sautéed until softened and combined.
After the rice finishes cooking and excess liquid is removed, it is added to the pan with the sautéed vegetables. Light butter may be mixed in optionally for extra richness. Gouda cheese is grated over the mixture and stirred in to melt thoroughly, creating a creamy texture that complements the tender rice and vegetables.
This pilaf can be served with a favorite protein or enjoyed on its own as a comfort food. The combination of umami mushrooms, fresh spinach, and smoky gouda adds depth to the dish.
It stores well refrigerated for several days and can be frozen in portions for later use. To reheat, thaw if frozen and heat in a skillet to revive some crispness. Substituting regular rice for Banza rice is possible without changes to the recipe process.
Ingredients
- 2 cups vegetable broth
- 2 talks sage
- 1 cup water
- 1 bag Banza rice with garlic and olive oil
- cooking spray
- 2 cups spinach
- 1 cup mushrooms
- ½ cup onion white
- ½ cup gouda cheese
- 2 tbsp butter optional, light
Instructions
- Heat a sauce pan to medium heat. Then, pour in vegetable broth, water, rice, and fresh sage. Cook the rice according to the box/bag instructions.
- While rice is cooking, finely dice mushrooms, spinach, and white onion.
- Next, heat a skillet to medium heat and spray with cooking spray. Add onions and sauté for 3-4 minutes. Then, add mushrooms and spinach. Turn to low heat.
- The rice should be done soon. Remove excess liquid. Then, add cooked rice into the skillet and stir with a rubber spatula or mixing spoon. Option to fold in light butter here.
- Grate gouda cheese over the skillet and stir until melted.
- Serve with favorite protein or just eat it with a fork. It’s AMAZING!
Notes
- This pilaf keeps well in the refrigerator for up to five days, making it suitable for batch cooking and meal prep.
- Freeze in airtight containers or individual servings for longer storage; thaw before reheating in a skillet to retain texture.
- You can substitute regular rice for Banza rice, following the cooking instructions as given.
