Mushroom Swiss Burger

The Mushroom Swiss Burger combines juicy ground sirloin patties seasoned with BBQ rub and Worcestershire sauce, topped with Swiss cheese and a rich mushroom sauce made from sautéed mushrooms, onions, thyme, Worcestershire, red wine, and cream. The mushroom sauce adds depth and moisture, complementing the beef’s savory flavor with earthy and tangy notes.

Description

This Mushroom Swiss Burger recipe begins by seasoning ½ lb ground sirloin patties with BBQ rub, salt, pepper, and Worcestershire sauce, then chilling before cooking. The mushroom sauce is prepared separately by sautéing onion and fresh thyme in olive oil and butter, adding sliced mushrooms seasoned with salt and pepper. Worcestershire sauce and red wine are added and reduced to concentrate the flavors.

Flour is incorporated into the mushroom mixture to thicken the sauce, followed by beef stock and heavy cream to create a smooth, rich topping. This sauce is spooned over cooked beef patties topped with slices of Swiss cheese, served on toasted hamburger buns with butter.

The burgers offer a blend of hearty, juicy meat with a savory, creamy mushroom topping delivering complex flavors and a satisfying texture contrast. They work well as a filling main dish for meals featuring classic burger accompaniments like fries or salads.

The mushroom sauce can be prepared ahead and reheated, and different mushroom varieties or ground beef types can be used to adjust flavor and juiciness.

Ingredients

Servings
  • 2 lbs ground sirloin divided into 4 patties
  • 4 tablespoon perfect BBQ rub or your favorite seasoning
  • 4 tablespoon Worcestershire sauce
  • 4 Hamburger Bun
  • 4 tablespoon butter unsalted
  • 8 lices swiss cheese

FOR THE MUSHROOM SAUCE

  • 2 tablespoon olive oil
  • 2 tablespoon butter unsalted
  • ¼ cup onion chopped
  • 1 tablespoon thyme fresh, chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper freshly ground
  • 1 lb mushrooms sliced
  • 1 tablespoon Worcestershire sauce
  • ¼ cup red wine
  • 2 tablespoon all-purpose flour
  • 1 cup beef stock or broth
  • 2 tablespoon heavy cream

Instructions

PREP THE BURGERS

  1. Season the patties all over with the BBQ rub and a small sprinkle of salt and pepper. Place in a dish large enough to hold the patties, and sprinkle a few splashes of Worcestershire sauce over both sides of all patties. Cover and place in the refrigerator.

MAKE THE MUSHROOM SAUCE

  1. Heat the oil over medium-high heat in a large skillet or saucepan. Add the butter and swirl the pan until it is melted.
  2. Add the onions and cook until soft and translucent, about 3 to 5 minutes.
  3. Add the chopped thyme and cook until fragrant, about 30 seconds.
  4. Add the mushrooms and ½ teaspoon of salt and ¼ teaspoon black pepper. Stir to fully coat the mushrooms.
  5. Cook until mushrooms are soft and beginning to exude liquid. Add 1 tablespoon Worcestershire sauce and the red wine (¼ cup) and cook until the liquid has reduced by about half, about another 4 to 5 minutes.
  6. Sprinkle the flour all over the mushrooms and stir until fully incorporated. Cook for 2 minutes, stirring occasionally.
  7. Add the beef stock and cook, stirring frequently, until thickened, about 4 to 5 minutes. Stir in the cream. Taste and add more salt, if desired. Keep warm on low heat on the stove.

FINISH OFF THE BURGERS

  1. While the sauce is coming together, fire up your grill to medium-high heat.
  2. Place the burgers directly over the heat and grill until desired doneness, about 5 minutes per side for medium to medium-rare.
  3. Just before the burgers are done, place two slices of cheese on each patty. Also at this time, place the buttered side of all of the buns onto the grill.
  4. Remove the burgers from the grill once the cheese has melted. Remove the buns once they are nicely toasted and brown around the edges.
  5. Place burgers on the bottom buns and top with the warmed mushroom sauce. Top with the remaining buns.

Notes

  • Burgers are ½ lb each; adjust size and cooking time if making smaller patties.
  • Ground Wagyu beef or 85% lean sirloin offer good juiciness and flavor; choose based on preference.
  • Use preferred mushrooms such as white button, shiitake, or portabella; rehydrate dried mushrooms per package instructions.
  • Mushroom sauce can be prepared 2 days ahead; gently reheat on stove before serving.
  • For serving a crowd, keep mushroom sauce warm in a Crock-Pot on the "Warm" setting.
