Mussels in Spicy Tomato Broth

A delicious bowl of mussels cooked in a spicy tomatoey broth hits the spot. Don't forget the crusty bread to mop up all the juicy goodness.

Ingredients

  • 2 lbs mussels
  • 1 cup chicken broth
  • 2 garlic minced, cloves, minced
  • 2 Tbsp olive oil
  • 3 Tbsp butter unsalted
  • 10 oz diced tomatoes with chilies RO*TEL brand
  • lemon juice of 1
  • 2 Tbsp thyme fresh

Instructions

  1. Clean mussels by scrubbing them with a small brush under running water. If you come across any mussels that are opened, tap it a couple times and if it still does not close, discard it. Remove any thin stands or "beards" as they are called from the mussels also. Farm raised mussels are thankfully very clean.
  2. In a braising pan over medium heat warm up the oil and butter, and saute garlic until translucent.
  3. Next add the chicken broth, and the blended RO*TEL, and allow the mixture to come to a boil.
  4. Squeeze in the lemon, and then quickly add the mussels. Cover the pan and allow the mussels to cook for about 5 minutes. Check to see that they have opened. By now they should all be opened, if not give it an extra 2-3 minutes covered.
  5. Add the fresh thyme.
  6. Serve with plenty of crusty bread.
