Mustard-Roasted Potatoes Recipe

These mustard-roasted potatoes are large chunks of potato coated in a tangy mix of whole-grain mustard, olive oil, melted butter, garlic, lemon, and rosemary. Roasting them at 350°F crisps the outside while keeping the interior soft and fluffy, delivering a balanced texture with a bright, savory flavor. This side dish offers a flavorful twist on classic roasted potatoes and pairs well with a variety of main courses.

Description

Mustard-Roasted Potatoes Recipe combines hearty potato chunks with a mustard-based coating that includes olive oil, melted butter, crushed garlic, lemon zest and juice, and finely chopped rosemary. These ingredients infuse the potatoes with a piquant and aromatic profile. Roasting in the oven results in a crispy exterior and tender interior, while the lemon adds a subtle brightness to the overall flavor.

The chunks of potato are substantial enough to hold their shape during roasting, making them suitable as a robust side dish. This preparation is versatile and complements meats, poultry, or vegetarian mains.

Coating the potatoes thoroughly with the mustard mixture ensures an even distribution of flavor and helps achieve the desired crispy yet soft texture. Make sure to spread the potatoes on a baking sheet without crowding, so they roast properly.
