Description

This chowder starts by simmering chopped potatoes, celery, and onions in clam juice diluted with water until they are nearly tender. Separately, a roux is made by cooking butter and flour together, then gradually whisking in half-and-half to create a smooth, thickened cream base without boiling.

The creamy roux is added back to the vegetables and clam juice, then minced clams, salt, red wine vinegar, and black pepper are stirred in to finish the chowder. This produces a rich, hearty soup with tender vegetables and a creamy broth flavored by the clams and a subtle acidic note from vinegar.

The chowder can be kept warm without boiling for up to an hour before serving, maintaining its texture and flavor. It makes a satisfying starter or main dish during cooler weather or seafood meals.

  • 1 cup onion chopped
  • 1 cup celery chopped
  • 2 cups potato diced peeled; varieties: Yukon Gold or Red potatoes
  • ¾ cup butter
  • ¾ cup flour
  • 1 quart half-and-half
  • 2 cans cans (6.5-ounces each) minced clams
  • 1 ½ teaspoons salt
  • 1 ½ tablespoons red wine vinegar
  • black pepper to taste

Instructions

  1. Drain the clams and reserve the liquid. In a large pot, place the vegetables and pour the claim juice over the top. Add enough water to barely cover the vegetables.
  2. Simmer over medium heat until the vegetables are almost tender (don’t overcook them in this step!), about 5 minutes.
  3. Meanwhile, in a saucepan, melt the butter and add the flour, making a roux with a wire whisk. Constantly stirring, add the half-and-half slowly. Cook and stir until smooth and thickened, without boiling.
  4. When slightly thickened, add the roux to the vegetables and add the clams, salt, vinegar and pepper (to taste). Can keep warm (without boiling!) for a up to an hour or serve immediately.
