  • 1 cup celery small diced
  • 1 cup red grape halved or quartered
  • ½ cup almonds chopped slivered, or cashews
  • 2-3 tablespoons green onions finely diced, or chives
  • 2 tablespoons parsley chopped, fresh

Dressing:

  • 1 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lemon juice freshly squeezed, or red wine vinegar
  • 1 tablespoon Dijon mustard
  • ½ teaspoon coarse kosher salt (use a bit less for table salt)
  • teaspoon black pepper I use coarsely ground
  • teaspoon dill dried
  • teaspoon garlic powder
  • teaspoon onion powder
  • salt to taste
  • black pepper to taste

Instructions

  1. Combine all of the salad ingredients in a large bowl.
  2. Whisk together all of the dressing ingredients until smooth.
  3. Pour the dressing over the salad ingredients and mix until evenly combined. Season to taste with additional salt and pepper, if needed.
  4. Refrigerate until ready to serve.
  5. Serve on lettuce, bread, croissants, or rolled up in tortillas or flatbread.

Notes

  • Use rotisserie chicken or pressure-cooked chicken for tender, ready-to-use meat.
