My Favorite Chicken Salad
Description
My Favorite Chicken Salad uses cooked shredded chicken mixed with diced celery, halved grapes, chopped nuts, and fresh green onions and parsley. The dressing is a smooth blend of mayonnaise, sour cream, lemon juice, and Dijon mustard, seasoned with salt, pepper, and dried herbs like dill, garlic powder, and onion powder. This combination results in a creamy, slightly tangy salad with textural contrast from the fresh vegetables and nuts.
The salad’s components complement each other by offering juicy sweetness from the grapes and a mild crunch from the celery and almonds or cashews. It's typically served chilled and adaptable to various serving options such as on lettuce leaves, sandwich bread, croissants, or wrapped in tortillas for a convenient meal.
Using a rotisserie chicken or pressure-cooked chicken provides tender meat, and the dressing is more flavorful after resting chilled for one to two hours, although it can be eaten immediately. The recipe’s flexibility allows leaving out nuts or adding other fruits as preferred.
Ingredients
Chicken Salad:
- 4 cups cooked shredded (or small chopped) chicken (see note)
- 1 cup celery small diced
- 1 cup red grape halved or quartered

- 2 tablespoons parsley chopped, fresh
Dressing:
- 1 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon lemon juice freshly squeezed, or red wine vinegar
- 1 tablespoon Dijon mustard
- ½ teaspoon coarse kosher salt (use a bit less for table salt)
- ⅛ teaspoon black pepper I use coarsely ground
- ⅛ teaspoon dill dried
- ⅛ teaspoon garlic powder
- ⅛ teaspoon onion powder
- salt to taste
- black pepper to taste
Instructions
- Combine all of the salad ingredients in a large bowl.
- Whisk together all of the dressing ingredients until smooth.
- Pour the dressing over the salad ingredients and mix until evenly combined. Season to taste with additional salt and pepper, if needed.
- Refrigerate until ready to serve.
- Serve on lettuce, bread, croissants, or rolled up in tortillas or flatbread.
Notes
- Use rotisserie chicken or pressure-cooked chicken for tender, ready-to-use meat.
- The dressing’s flavors improve when refrigerated for 1-2 hours before serving.
- You can omit nuts or substitute with other fruits like dried cranberries or mandarin oranges to suit tastes or dietary needs.
- The salad is versatile and can be served on bread, croissants, lettuce, or in wraps.
