Description
Using a sturdy variety of corn tortilla chips placed in a single layer on a foil-lined baking sheet, shredded cheeses are sprinkled over the chips and briefly baked at 350°F until cheese begins to melt. This step warms the chips and softens the cheese without making the base soggy.
After removing from the oven, the nachos are topped with rinsed black or refried beans, roasted corn kernels, jalapeño slices, and halved cherry tomatoes. Salsa and a drizzle of fresh lime juice are added last to provide bright acidity and additional moisture. Avocado or guacamole adds creaminess and a mild flavor that complements the spiciness of jalapeños.

Ingredients
- 1 large bag corn tortilla chips or homemade corn tortilla chips
- 4 ounces Colby jack cheese shredded, about 1 cup
- 4 ounces cheddar cheese shredded, about 1 cup
- ½ can black beans rinsed and drained, or refried beans
- 1 cup corn kernels roasted preferably
- 1 jalapeño sliced, pickled or fresh
- 1 cup cherry tomato sliced in half
- salsa your favorite homemade
- 1 large avocado sliced, or guacamole
- lime juice fresh, to drizzle the nachos
Instructions
Warm the chips:
- Preheat the oven to 350 °F (176 °C)
- Line a baking sheet or oven-proof skillet with tin foil.
- Arrange the tortilla chips in a single layer, overlapping them slightly. Sprinkle some cheese all over the tortillas.
- Bake the chips for 5 minutes, or just until the cheese starts to melt.
Assemble and bake the nachos:
- Carefully remove the pan from the oven and sprinkle with a little bit of each topping.
- Finally drizzle some salsa and lime juice. Serve immediately.
