Naturally Sweetened Caramel Macchiato (vegan)

This Naturally Sweetened Caramel Macchiato features a homemade salted coconut caramel sauce using coconut milk, maple syrup, coconut sugar, vanilla, and sea salt. The caramel sauce blends with hot almond milk and strong coffee or espresso to create a creamy, vegan-friendly coffee drink with a rich caramel flavor and a touch of saltiness.

Description

The salted coconut caramel sauce is made by boiling coconut milk, pure maple syrup, and coconut sugar until thickened, then flavored with vanilla extract and coarse sea salt. The sauce can be used immediately or stored chilled, where it thickens further and keeps for several weeks.

To prepare the macchiato, hot almond milk is frothed or heated, then combined with a tablespoon of the caramel sauce and strong coffee or espresso. The drink is finished with a caramel drizzle on top, providing a sweet and creamy balance to the coffee’s bitterness.

This recipe offers a dairy-free alternative to classic caramel macchiato, suitable for vegan diets and those seeking natural sweeteners. The salted coconut caramel contributes both sweetness and a hint of oceanic salt, enhancing the overall flavor experience.

Ingredients

Servings

For the Salted Coconut Caramel Sauce:

  • 1 coconut milk 14-ounce can, full-fat
  • ¼ cup pure maple syrup
  • ¼ cup coconut sugar
  • 1 teaspoon vanilla extract pure
  • ½ teaspoon sea salt coarse

For the Caramel Macchiato:

  • 6 ounces coffee strong-brewed or 1 shot of espresso
  • 1 cup almond milk unsweetened
  • 1 tablespoon salted caramel sauce plus more for serving

Instructions

Make the Salted Coconut Caramel:

  1. Add the coconut milk, maple syrup, and coconut sugar to a medium-sized sauce pan and bring it to a full boil. Allow mixture to boil, stirring frequently, until thickened, about 10 to 15 minutes.
  2. Add the vanilla extract and salt to the caramel mixture. Stir until combined, then remove caramel from the heat. You can use caramel right away or pour it into an air-tight container to use later (the longer it sits, the thicker it will get). Caramel lasts in your refrigerator for 3 to 4 weeks.

Make the Caramel Macchiato:

  1. Heat the milk using a milk frother or heat it in the microwave or stove top until hot, but not scalding.
  2. Add 1 tablespoon of prepared caramel to the bottom of a mug. Add 6 ounces of strong coffee (or 1 to 2 shots of espresso) and stir until well-combined.
  3. Add the frothed milk.
  4. Drizzle a fancy caramel design on top of the foam and enjoy!
