New York Strip Steak with Garlic Butter
Description
New York Strip Steak with Garlic Butter focuses on perfectly searing the steaks in a high-heat pan using a neutral oil, then basting with butter combined with smashed garlic and fresh thyme sprigs. This combination imparts a subtle aromatic richness that complements the beef without overpowering it. After browning, finishing the steaks in a hot oven ensures even cooking and controlled doneness, aiming for medium at 140 degrees Fahrenheit. Resting the steaks for five minutes post-cooking helps retain juices and tenderness.
The resulting steaks have a caramelized crust with gently infused garlic and herbal notes, while the interior remains tender and evenly cooked. Serving immediately after slicing preserves the texture and flavor balance created by the butter and pan drippings. The simplicity of seasonings and technique allows the quality of the beef to stand out.
This preparation suits a straightforward, hearty main dish and can be paired with classic sides such as roasted vegetables or a fresh salad to complement the rich steak. Its approach is traditional yet effective, emphasizing quality ingredients and timing.
Ingredients
- 4 New York Strip Steaks 8-10 ounces each
- 1 1/2 tablespoons neutral flavored oil such as corn oil, safflower oil, canola oil, grapeseed oil or peanut oil
- salt to taste
- black pepper to taste
- 4 tablespoons butter
- 4 garlic smashed, cloves
- 5 prigs thyme fresh
Instructions
- Let the steaks sit at room temperature for 20 minutes.
- Preheat the oven to 450 degrees F. Season the steaks on both sides with salt and pepper to taste.

- Add the oil to the pan. Place the strip steaks in the pan in a single layer.
- Cook for 3-4 minutes per side or until deep golden brown.
- Add the butter to the pan. After the butter has melted, add the garlic cloves and thyme sprigs to the pan. Stir to combine.
- Spoon the butter mixture over the steaks. Insert a probe thermometer into the thickest part of one of the steaks.
- Place the meat in the oven and bake for 5-7 minutes or until the thermometer registers 140 degrees F for a medium steak.
- Remove the pan from the oven. Let the steak rest for 5 minutes. Spoon the pan drippings over the steak, then slice and serve immediately.
