Ingredients

  • 2 carrots 2/3 cups shredded
  • 1 cup old fashioned rolled oats gluten free
  • 1/4 cup walnuts
  • 5 dates pitted
  • 2 tablespoon honey or maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon ground flax seed
  • pinch salt
  • 1/2 cup shredded sweetened coconut divided

Instructions

  1. Peel carrots and finely grate them on a box grater or with a food processor and set aside in a medium sized bowl. Use a paper towel to give the carrots a little squeeze to remove some of the excess moisture.
  2. Add all remaining ingredients, except the coconut, into the bowl of a food processor and blend until it's coarsely ground.
  3. Add mixture to the bowl with carrots and 1/4 cup of coconut and mix well until it all is well combined.
  4. Roll out 12 small balls and coat in coconut by rolling the balls in a small bowl with the rest of the coconut.
  5. Enjoy!

  • Honey: We also love these with maple syrup!
  • Oats: To ensure that they are gluten-free, be sure to check the label of your oats.  You can also use instant oats if that's all you have. 
  • Coconut:  We've made these with both sweetened and unsweetened. Sweetened of course adds more sweetness, but there's still plenty if using unsweetened coconut. 
  • Walnuts: Almonds or pecans are other great options.
