No Bake Cheesecake

When you're craving cheesecake but don't have the time it takes to bake one, throw together this No Bake Cheesecake. It's ready to chill in the fridge in under 30 minutes.

For the crust:

  • 1 ½ cups Graham cracker crumbs 126 grams (8 whole crackers)
  • 6 tablespoons salted butter softened, 85 grams
  • cup packed brown sugar 70 grams

For the cheesecake filling:

  • 24 ounces cream cheese softened to room temperature (3 packages)
  • 2 cups whipped topping such as Cool Whip, 5 1/2 ounces
  • ¼ cup sour cream 55 grams
  • ¾ cup granulated sugar 150 grams
  • 2 teaspoons vanilla extract 10 grams
  • ¼ teaspoon salt

Instructions

Make the crust:

  1. Mix graham cracker crumbs, butter, and sugar in a bowl.
  2. Press the mixture into a greased 9-inch springform pan. Use a small measuring cup to press the crumbs up the sides of the pan and firmly into the bottom.
  3. Freeze the crust while you are making the filling (about 10-15 minutes).

Make the cheesecake filling:

  1. Using a hand mixer, mix the softened cream cheese until it is smooth and creamy.
  2. Add the sour cream, granulated sugar, vanilla extract and salt. Mix on low speed until smooth.
  3. Fold in the whipped topping until combined and the mixture is even. Do this carefully so the mixture remains fluffy.
  4. Pour filling over the crust and use an offset spatula to press the cheesecake filling down slightly to remove any air pockets.
  5. Chill in the refrigerator for at least 6 hours (8-12 hours is ideal).
  6. Top with your favorite fruit, caramel or chocolate sauces.
