  • 1 cup almond flour
  • 1/2 cup almond butter

  • 1/2 cup confectioners sugar-free sweetener
  • 1/2 cup sugar-free chocolate chips

Optional Add-ins:

  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt sea salt

Instructions

  1. Add the almond butter and ghee to a mixing bowl and microwave it for 20 to 30 seconds, or until softened. You want these ingredients to be very soft (or melted) so that they stir easily.
  2. Add the remaining ingredients except the chocolate chips to the mixing bowl and stir until well-combined. Once the dough is well-mixed, fold in the chocolate chips.
  3. Transfer the cookie dough to a parchment-lined loaf pan (mine is 9” x 5”) and freeze for 1 hour. When you’re ready to serve, thaw, then use a sharp knife to cut squares.
  4. Store leftovers in the refrigerator or freezer in a sealed container or bag.
