Ingredients

Servings
  • ½ cup sweet potato pre-roasted or cooked and mashed, measured tightly packed
  • 2 tbsp baking powder corn and aluminum free
  • tbsp cream of tartar
  • cup maple syrup
  • cup carob
  • + ½ + ½ tbsp baking soda
  • 1 tsp carob best added by ¼ tsp at a time
  • cup cassava flour
  • cup tapioca
  • ¼ cup coconut flower sugar

Instructions

  1. Warm up your waffle iron.
  2. Mix the cassava, tapioca, carob and sugar.
  3. Mash in the sweet potato with a fork, until you can form a very thick batter, almost a dough.
  4. Make two batter/dough balls. I used a spoon. Scoop them into your iron.
  5. Cook for 8 minutes (or 9 to 10 for a bit crispier).
  6. In the meantime whisk in the carob to a small bowl of maple syrup. It's best to do that with a small dose at the time.
  7. Serve the waffles on a plate and drizzle the sauce on top.

Notes

  • Great to serve with fresh strawberries.
