Classic Frozen Yogurt

  • 500 grams / 17.6 ounce Greek yogurt full-fat, strained if you can't find strained see this tutorial on how to strain it at home
  • 170 grams / 6 ounce sugar
  • 400 ml heavy cream 35 % fat
  • Optional: ½ teaspoon vanilla extract

Refined Sugar-Free Frozen Yogurt

  • 500 grams / 17.6 oz Greek yogurt full-fat, strained if you can't find strained see this tutorial on how to strain it at home
  • 100 grams / 3.5 oz honey
  • Optional: ½ teaspoon vanilla extract

Instructions

Classic Frozen Yogurt

  1. Add the heavy cream (and vanilla extract if you are using it) to a mixing bowl and using your electric mixer beat over medium speed.
  2. Add half the amount of sugar gradually. Keep beating until you can see the traces of the whisk attachment on the cream. The cream should be firm and creamy but not too dense.
  3. Add the yogurt to a bowl together with the remaining sugar and beat with your electric mixer until the sugar dissolves and the mixture turns creamy.
  4. Combine both mixtures using the electric mixer. Then transfer the mixture to an airtight food container and into the freezer.
  5. Freeze for 2-4 hours or for up to a month.

Refined Sugar-Free Frozen Yogurt

  1. Add all of the ingredients for the sugar-free frozen yogurt to your electric mixer's bowl. With the whisk attachment on, beat over medium speed for 10 minutes.
  2. Freeze for 3-4 hours before serving.

Serving Frozen Yogurt

  1. If you freeze it overnight (or for a longer period of time) then you should remove the frozen yogurt from the freezer 15-20 minutes prior to serving.
  2. Enjoy with this fresh strawberry sauce, honey and walnuts, fresh fruit, fruit preserves etc.
