This easy chopped salad is the perfect no-lettuce salad for any meal! It's quick, refreshing, and so flavorful. Full of chickpeas, white beans, cherry tomatoes, cucumbers, and red onions tossed in a bright, zesty dressing, this lettuce-free salad is light but satisfying.

Ingredients

Servings
  • 15 ounces chickpeas rinsed and drained (1 can, 425g)
  • 15 ounces White beans rinsed and drained (1 can, 425g)
  • 10 ounces cherry tomato halved (283g
  • ½ small red onion minced or roughly chopped
  • 1 cucumber sliced into half-moons, seedless

For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 2 lemon juiced, or more if needed (optional, add the zest, plural
  • 2 cloves garlic pressed or minced
  • 1 teaspoon Dijon mustard
  • ½ to 1 teaspoon salt or more
  • ½ teaspoon black pepper or more

Instructions

  1. Add the chickpeas, white beans, tomatoes, onion, and cucumbers to a bowl and toss to combine.
  2. Combine the olive oil, lemon juice, garlic, Dijon mustard, salt, and pepper. mix well.
  3. Drizzle the dressing over the salad. Toss again.
