NO-PEEK CHICKEN CASSEROLE

Ingredients

  • long-grain white rice 1 cup
  • cream of mushroom soup 1 can (10.5 oz
  • cream of chicken soup 1 can (10.5 oz
  • chicken broth 1 can (14.5 oz
  • water ½ cup
  • onion soup mix 1 envelope
  • chicken breasts boneless, skinless, 6 pieces
  • salt to taste
  • black pepper to taste
  • parsley fresh, chopped, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rice, cream of mushroom soup, cream of chicken soup, chicken broth, water, and onion soup mix. Stir until well combined.
  3. Pour the mixture into a 9x13-inch baking dish.
  4. Season the chicken breasts with salt and pepper, then place them on top of the rice mixture in the baking dish.
  5. Cover the baking dish tightly with aluminum foil. Do not peek while it cooks.
  6. Bake in the preheated oven for 1 hour and 30 minutes.
  7. Remove from the oven and let it sit for a few minutes before uncovering.
  8. Garnish with fresh parsley and serve hot.

  • Rice Variations: You can use brown rice instead of white rice, but you may need to adjust the cooking time accordingly.
