Ingredients
For the rye crackers (4 servings):
- 6 lices rye bread thin sliced
- salt
- black pepper
For the cheese plate (4 servings):
- Danish pilsner brown or amber beer, or any other light lager
- 150 grams aged gouda 5 oz or
- 150 grams Danish Bernsteiner cheese 5 oz or
- 150 grams Danish North Sea cheese or 5 oz Velfrisk
- 150 grams Nørvind cheese or 5 oz with blue and white mould
- rye bread crackers see the recipe below
- cornichons about 12
- walnuts pecans/hazelnuts, a handful, or pistachios
- 150 grams smoked trout or salmon/eel, or 5 oz
- 100 grams North Sea shrimp or any other shrimps, or 3.5 oz
- 150 grams dry-cured Holsteiner smoked ham or Prosciutto ham, or 5 oz
- 85 grams liver pate or any other pâté mixed with chopped dried plums, fine, with plums, or 3 oz
- 1 pear
- dried cherries apples, pears/plums, a handful, or dried cranberries
- dried apricots apples, pears/plums, a handful, or dried cranberries
- 60 grams fig mustard or fig jam/honey, or 2 oz
Instructions
To make the rye crackers:
- Preheat the oven to 180 °C or 350 °F.
- Cut your bread slices in 4 pieces (if their shape is square or round). Arrange on a baking tray and sprinkle with salt and pepper.
- Roast for about 5 minutes, flip over and roast for 3 more minutes or until crispy.
To assemble the cheese plate:
- Arrange all the ingredients together with rye crackers on a large wooden board or plate. Serve as an appetizer. Enjoy!
Notes
- If you can't find some of these cheeses, no worries. Just make sure to have 3-4 different types of cheese on your plate.
