Description
Nutella Crepes start with a smooth batter made from all-purpose flour, sugar, salt, milk, eggs, and melted butter, blended and rested to develop the right consistency for thin pancakes. Cooking in a lightly buttered nonstick skillet produces crepes that are golden on the bottom and tender inside. Spreading each crepe with Nutella and sprinkling with mixed berries adds a sweet, nutty element combined with the freshness and slight tartness of the berries. Folding and topping with whipped cream completes the layered textures and indulgent flavor profile.
The balance between the slight sweetness of the crepe and Nutella with the brightness of the berries makes this dish suitable for breakfast, brunch, or a casual dessert. The whipped cream adds a creamy contrast that melts into the warm crepe.
For best results, make the batter ahead and refrigerate it for up to six hours, stirring before use. Use just enough batter to cover the pan evenly and work quickly to avoid thick, uneven crepes.
Ingredients
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1/4 teaspoon kosher salt
- 1 1/2 cups milk (I used 1%)
- 4 egg large
- 3 tablespoons butter melted + more for pan, unsalted
- 3/4 cup Nutella
- 1 1/2 cups mixed berries
- 3/4 cup Whipped Cream or whipped topping
- mint optional, fresh
Instructions
- Pour flour, sugar, salt, milk, eggs, and 3 tablespoons melted butter into a blender.
- Puree until mixture is smooth, about 30 seconds. Let batter sit for 15 minutes before you use it.
- Heat a 12-inch nonstick skillet on medium heat. Lightly coat with additional butter. Add scant 1/3 cup batter and swirl to completely cover bottom of skillet. Cook until underside of crepe is golden brown, 2-3 minutes.
- Loosen edge of crepe with a spatula, then with your fingertips, quickly flip. Cook 1 minute more. Slide crepe out of skillet and repeat with remaining batter.
- Spread 1 1/2 tablespoons of nutella over each crepe and add a sprinkling of berries. Fold each crepe into a triangle. Top with a dollop of whipped cream and serve immediately. Garnish with mint if desired.
Notes
- Prepare the batter up to six hours in advance and keep refrigerated; stir well before cooking to ensure even texture.
- Use a nonstick skillet with just enough melted butter to lightly coat the surface for easy crepe flipping and golden coloring.
- Spread the Nutella while the crepe is warm for easier spreading and better flavor melding.
