Nutella-Pretzel Truffles

Nutella-Pretzel Truffles blend crunchy miniature pretzels with rich Nutella, butter, and sugars to create a textured, sweet, and slightly salty treat. The mixture is chilled and shaped into small balls before being dipped in melted semisweet chocolate to form a glossy coating. These truffles offer a contrast between creamy Nutella, crisp pretzel pieces, and smooth chocolate, making them a satisfying snack or dessert bite.

Description

These truffles start by crushing miniature pretzels to tiny pieces that add a crunchy contrast to the creamy Nutella and butter mixture. Light brown sugar and a pinch of salt balance the sweetness and enhance the flavor complexity. Powdered sugar is added to help firm up the mixture for shaping into small balls.

After chilling, the balls are dipped individually in melted semisweet chocolate combined with vegetable shortening to give a smooth, shiny finish that hardens nicely. The final truffles combine crunchy, creamy, sweet, and salty textures in one bite. They are best served chilled and can be enjoyed as a dessert or a treat to share.

This recipe highlights the harmony between nutty, chocolate-hazelnut spread and salty pretzels, with the chocolate coating adding richness and containment. The process requires some chilling to firm the centers before dipping to maintain the truffle shape and texture.

Ingredients

Servings
  • cups miniature pretzels
  • ½ cup Nutella
  • 1 tablespoon butter at room temperature, unsalted
  • 2 tablespoons light brown sugar
  • Pinch salt
  • 3 tablespoons powdered sugar
  • cups semisweet chocolate chips
  • tablespoons vegetable shortening or refined coconut oil

Instructions

  1. Line a rimmed baking sheet with parchment paper; set aside.
  2. Put the pretzel pieces into a resealable plastic bag and crush into very small crumbs (a rolling pin or mallet works great for this).
  3. In a small bowl, stir together the Nutella, butter, brown sugar and salt. Mix until all of the ingredients are completely blended and smooth. Add the pretzel bits to the Nutella mixture and mix thoroughly. Add the powdered sugar and mix until completely combined.
  4. Using a small cookie scoop, or about 2 teaspoons worth of Nutella mixture, gently shape into a ball. Place the ball on the parchment-lined baking sheet and repeat with the remaining Nutella mixture. Place the baking sheet into the refrigerator and chill for at least 30 minutes.
  5. When ready to dip the truffles, microwave the chocolate chips and vegetable shortening together in a small bowl at 50% power in 30-second increments, stirring after each, until completely melted and smooth.
  6. Working one at a time, dip one truffle into the melted chocolate and use a fork to roll it around, ensuring that it is completely coated with chocolate. Let any extra chocolate drip off and place back on the parchment-lined sheet. Repeat with all of the remaining truffles. Garnish with additional crushed pretzels, if desired.
  7. Return the baking sheet to the refrigerator and again chill for at least 30 minutes. Store in an airtight container in the refrigerator for up to 1 month.

Notes

  • Chill truffles for at least 30 minutes before chocolate dipping to retain shape.
  • Use small cookie scoop or teaspoons to form uniform truffles for even coating.
  • Dip truffles individually in melted chocolate mixture for best coverage.
