Nutella Snowball Cookies Recipe

Nutella Snowball Cookies are rich, buttery cookies filled with frozen Nutella centers and coated in powdered sugar. The chopped pecans in the dough add a nutty texture, complementing the smooth chocolate-hazelnut filling. The cookies bake until golden and are rolled in powdered sugar twice—once warm and once cool—creating a delicate snowy exterior. These treat-sized confections have a crisp outer shell and a soft, chocolatey center.

Description

This recipe creates cookies with a tender, buttery dough enriched by the flavor and crunch of finely chopped pecans. Preparing the Nutella filling as small frozen dollops ensures a molten chocolate center after baking. The dough is shaped around these frozen Nutella portions, sealing the filling inside each cookie ball.

Once baked until golden, the cookies are rolled in powdered sugar while warm, which adheres smoothly, and then cooled before a second coating, giving the cookies their signature snowball appearance and a sweet finish. The contrast between the crisp exterior and the soft Nutella core provides a satisfying texture contrast.

These cookies are perfect as a dessert or snack, offering a refined treat with familiar Nutella flavor enhanced by the nutty dough and powdered sugar coating. Preparing the filling ahead simplifies the baking process and helps maintain the shape and surprise of the center.

Ingredients

Servings
  • 1/2 cup Nutella
  • 1 cup butter room temperature, unsalted
  • 1/2 cup sugar
  • 2 cups pecan finely chopped
  • 2 1/4 cups flour
  • 1 cup powdered sugar

Instructions

  1. Before making the cookie dough, prepare the frozen Nutella filling by adding it to a piping bag and piping out small dollops onto parchment paper and then freezing it while preparing the dough. Next, in a stand mixer, beat together the room-temperature butter and sugar.
  2. Add the chopped pecans and flour. Beat again to combine.
  3. Form the cookie dough into balls, and then flatten with your palm. Place the frozen Nutella dollops inside the flattened dough. Fold over and seal, shape back into balls. Place cookies on a baking sheet.
  4. Bake at 350°F for 15 minutes or until golden brown. Allow the snowball cookies to cool slightly for about 5 minutes, then roll each cookie through the powdered sugar while they're still warm. Allow to cool completely, then once again roll all cookies through the powdered sugar.
